Influence of storage conditions on the chemical composition of the potato tubers

In this paper an attempt was made to study the possible transformations which the potato tubers go through during the storage period both under normal storage conditions and under refrigerated-chamber conditions as well as with the consertvation alternating and varying under each of these conditions. Records were made of the analyses of the tubers concerning their contents of dry matter, acidity, starch, sugars and protein. Likewise sprouting was recorded. Three varieties were used in these tests : Tedria, Bintje and Konst 48-51. The results obtained revealed highly significant differences for varieties and for treatments, with regard to contents of dry matter, whereas, on the ether hand, these differences were for starch, sugars, acidity and protein among treatments only. Negative significant correlations were found between starch and acidity, positive significant ones between sugars and acidity, acidity and dry matter, and acidity and protein. Regarding sprouting, it was made evident that an initial period of 20 days of cold weather contributes to the effect of shortening the period of dormancy of the varieties mainly of the most belated in sprouting as was the case with Konst 48-51.
